Ingredients
1 ½ pounds ground turkey
1 tablespoon white wine vinegar
6 cups mixed greens
1 yellow onion, small, chopped
½ cup bread crumbs
1 egg, medium, beaten
2 tablespoons plus
2 teaspoons Dijon mustard
1 cup Italian flat-leaf parsley, fresh, chopped
3 tablespoons extra-virgin olive oil
1 jar roasted red peppers (7-ounce), cut into ½” pieces
Pepper & kosher salt to taste
1 cup Parmesan, grated
Directions
1- Pre-heat your oven to 400 F/200 C.
2- Combine turkey together with bread crumbs, onion, Parmesan, egg, red peppers, 2 tablespoons of mustard, parsley, ½ teaspoon pepper & ¾ teaspoon salt in a bowl, preferably large size. Shape the meat into a loaf pan, preferably 8” & then place in the baking dish.
3-Bake for 40 to 45 minutes, until no longer pink inside & the internal temperature reflects 165 F. Transfer the cooked meat to a large cutting board & let rest for 12 to 15 minutes, before slicing into pieces.
4- Whisk the leftover mustard together with the oil, vinegar, ¼ teaspoon pepper & ¼ teaspoon salt in a bowl, preferably small size.
5- Evenly divide the mixed greens among the individual plates & drizzle the vinaigrette on the top. 6-Serve with sliced meat loaf.
