Ingredients
4 ounces ground duck fat
½ cup finely chopped onion
1 pound ground duck
2 tablespoons parsley, chopped
½ cup bread crumbs
1 tablespoon thyme, chopped
¼ cup raisins, chopped
1 egg, large
1 ½ teaspoons salt Olive oil as needed
Directions
1-Preheat your oven to 200C/400 F in advance. Over moderate heat settings in a medium saucepan; heat a small amount of olive oil & sauté the onions for couple of minutes, until translucent; set aside.
2-Put the leftover ingredients in a mixing bowl, preferably large size & using your hands; mix until the fat is distributed evenly & all the ingredients are combined well. Make 4 patties from the mixture & transfer them to a large plate.
3- Over medium heat in a heavy cast-iron saucepan; sear the patties not more than a minute on each side. Transfer the patties to a roasting pan & cook in the preheated oven for 15 to 20 minutes.
4- Serve hot & enjoy!
