Southwestern Meatloaf

 Prep Time:  15 minutes
 Cooking Time: 1 hour & 45 minutes
 Servings: 8

Ingredients
  2 pounds ground beef
 ¼ teaspoon cayenne pepper
  2 eggs, large
 1 garlic clove, chopped
 ¼ cup onion, chopped
2 tablespoons green peppers, chopped
 ½ cup corn, frozen & thawed
  2 onions, green, chopped
1 cup chili sauce
  ½ cup breadcrumbs
 1 teaspoon chili powder
½ cup Pace Picante Sauce
 2 ½ tablespoons green chilies, chopped
  1 cup cheddar cheese, shredded
 ¼ cup black olives, sliced
1 teaspoon salt

 Directions
1-Preheat your oven to 350 F/175 C in advance.
2- Combine everything together (except the chili sauce) in a large bowl; mix well using your hands. 

 3-Place the mixture into a loaf pan, preferably 9x5" & top it with the chili sauce; cover with a foil. 

4-Bake in the preheated oven for an hour, remove the foil & bake again for half an hour.
