Mex Meatloaf


Prep Time:  10 minutes
 Cooking Time: 1 hour & 10 minutes
Servings: 6 persons

 Ingredients
 2 pounds ground beef
¼ teaspoon cumin
1 cup chunky salsa
 ¾ cup quick oats
4 eggs, large
¼ teaspoon chili powder
1 bell pepper, sliced into rings
  ¾ cup ketchup
 1 tablespoon salt

Directions

1-Preheat your oven to 375 F/185 C.

2-  Combine ketchup together with chili powder & cumin in a small bowl; mix well & set aside.

3-Now, combine beef with oats, salt, eggs & salsa; placing the mixture in a glass baking dish, preferably large size.

4- Form the mixture into a loaf & evenly spread the ketchup mixture over the meatloaf.

5-Bake for 45 minutes, preferably on the middle rack.

6- Remove from heat & place the pepper rings over the top.  Put the loaf again to the oven & cook for 12 to 15 more minutes.

7- Let stand for couple of minutes at room temperature. Serve & enjoy!
