French Market Meatloaf

 Cooking Time: 1 hour & 30 minutes
 Servings: 10

 Ingredients
2 pounds ground beef
  ¼ cup soft breadcrumbs
 1 package Cajun sausage links, diced (8-ounce)
  ½ teaspoon oregano, dried
1 green bell pepper, small, diced
 2 cloves garlic, minced
1 onion, medium, diced
½ teaspoon thyme, dried
1 egg, large, beaten lightly
½ cup beef broth
 1 teaspoon pepper
½ cup tomato sauce
 2 teaspoons salt  Tomato Gravy

Directions
1- Over medium-high heat settings in a nonstick skillet, preferably large size; cook Cajun sausage links together with onion, green bell pepper, garlic cloves, salt, pepper, thyme & oregano until vegetables are tender, 10 minutes, stirring every now and then. Place on the paper towels & drain; let cool at room temperature for couple of minutes.

2-Stir ground beef together with beef broth, tomato sauce, breadcrumbs & egg in a separate bowl, preferably large size; stir in the sausage mixture. Shape the meat mixture into a loaf, preferably 11 ½ x 4”; place in an aluminum foil, preferably lightly greased & lined with jellyroll pan, preferably 15x10”.

3-Bake until meat mixture is no longer pink in the middle, for 50 minutes, preferably at 375 F/185 C; drain the meat loaf & let stand for 8 to 10 minutes at room temperature. Serve with the Tomato Gravy.
